I've been a little slow with my blogging recently. So, I'm working on catching up. These are the cupcakes I made for our Yokota Babies Meet and Greet. There is a bit of a story to them. First, came the peanut butter cookies. I found a recipe in my Mom's recipe box for peanut butter cookies made with wheat flour and honey. I thought they sounded yummy. So, I made a batch. They weren't as yummy as the no flour peanut butter cookies (that recipe is really easy....1 cup of peanut butter, 1 cup of sugar, 1 stick of butter, mix and cook). They were more cakey and not as moist and happy as the others. So, I decided to scrap the cookies and make sour cream chocolate cupcakes instead (another of my mom's recipes..this one is tried and true). At least I thought it was tried and true. I made the mistake of putting in baking powder instead of baking soda (lack of sleep will do that to you), and the cupcakes didn't rise and were a bit dense. I wondered about topping them with the cookies to fill up the cupcake cups and Denny thought that sounded good. We tried it with vanilla cream cheese frosting as the glue, and they were good....we thought they'd be better with chocolate icing...so I made it chocolate.
Easy enough..just use your favorite chocolate cupcake recipe...but don't fill the cups super full. Then put on some icing and squish a peanut butter cookie on top. They really turned out delicious (even though separately they left a bit to be desired).
