At last weekend's farmer's market, I decided to check out the fresh cheese stand from Blue Jacket Farms. They were handing out samples of crispy crusted pieces of white cheese that had been pan fried and dipped in a strawberry balsamic sauce. It was so delicious I brought some home to try. It's called Gretna Grilling Cheese and is similar to halloumi, but made locally.
Grilling the cheese only takes a couple of minutes in a nonstick pan. No oil needed, just drop it into the dry pan and let it get a nice golden crust on one side, then flip. I made my own strawberry balsamic sauce...just a spoonful of strawberry jam mixed with balsamic vinegar. Mix it up til smooth and taste to make sure you have the right balance of sweet and tart. Serve the cheese fresh off the stove for the best burst of crispy goodness and chewy gooey insides. Yum!
