After years of neglect, I'm breathing some life back into the old food blog. :) It's about time.
My four year old loves to create "experiments". And this mommy doesn't like to waste things. So, I try to turn her experiments into something we can either use (like dough for making volcano experiments) or eat (usually, something bread-like). Earlier this week, her experiment involved blueberry yogurt and water. And another blueberry yogurt. So, I thought, maybe we could turn this into a sweet bread. Mmmm, maybe some lemon blueberry rolls. I pulled out the yeast and made a little slurry. And I convinced her to let me add it to her experiment (she initially didn't want to make bread dough). Then we added in butter and an egg to further enrich the dough and flour until it all came together and was kneadable. And voila, bread dough. See the full recipe below.
As Sasha was adding blueberries, she decided we needed to add strawberries too.

Blueberry, Strawberry and Lemon rolls
1 cup yogurt (we used two kid's blueberry yogurts)
1 1/4 cup warm water
1 teaspoon yeast
2 tablespoons softened or melted butter
1 egg
3-6 tablespoons brown sugar (depending on sweetness of yogurt used)
Flour (probably 3-4 cups, I didn't measure), I used about 1/3 white whole wheat and the rest all purpose.
Filling
about 1/4 to 1/3 cup of sugar
zest of 1 lemon
handful of blueberries
handful of strawberries, sliced
Glaze
3 tablespoons cream cheese, softened
1-2 tablespoons lemon juice
powdered sugar

Mix yeast with 1/4 cup of warm water and set aside.
Mix together yogurt, 1 cup of water, egg, brown sugar and butter (if melted). Stir in the yeast mixture.
Add flour a little at a time and stir until dough forms. Dump onto counter or mat and knead, adding flour until the dough is no longer sticky. It should be pliable and a little bit tacky to the touch.
Spray a bowl with oil and toss the ball of dough in...roll it in oil, cover bowl with saran wrap and set in a warm place to rise.
Let it rise until it doubles, about 2 hours. In the meantime, mix about 1/3 to 1/3 (again, I didn't measure) of sugar with the zest of one lemon. Let sit.
Set oven to 350 degrees.
Place dough on floured counter or mat. Sprinkle more flour on top and pat it out with your hands. Use a rolling pin and roll it out into a flat rectangle. Mine was approximately 9x15(ish).
Sprinkle the lemon sugar onto the dough, leaving one long strip clear. then sprinkle on blueberries and sliced strawberries. Carefully pull up one long side of dough and roll a tight roll. Cut the roll into a dozen slices.
Place rolls on a baking sheet, pan or my favorite, a cast iron skillet. My 12" skillet fit all 12 rolls. Place in oven and bake for 30-35 minutes until golden. Let cool.
Make the glaze: Mix cream cheese and lemon juice together. Add powdered sugar a spoonful at a time until you have a nice thick glaze. Drizzle on top of the rolls.
